Found a new tutorial that utilises the poster edge and cut out filters in photoshop:
1. Make sure the image in in RGB mode
2. Apply the poster edge filter
3. Adjust the brightness and contrast to control the tones that will appear
4. Apply the cut out filter.
End effect looks quite good, still needs a bit of extra touch up with a brush, but it will give me a good start and speed up the workflow.
